Being Mediterranean, i truly do love the flavours and everything about the Mediterranean cuisine. I love the ‘fixation’ on fresh, colourful, tasteful products. I love the aromas, the colours, the senses involved in cooking and eating in a Mediterranean country.
So i was in absolute heaven in Tuscany! And of course I came back, but my mind is still somewhere in the vineyards and medieval cities! And thus this pesto! Hope you enjoy it as much as i did!
Ingredients:
1/2 cup sun-dried tomatoes
1 cup fresh basil
1/2 cup cashew nuts
3 tablespoons olive oil or oil from the tomatoes
Salt and pepper, to taste
Red chili flakes (optional)
How to:
1. Start by soaking the cashews in warm water, to get them softer
2. Blend all ingredients together until smooth.
Mix it with pasta, in salads, in wraps etc etc.
