Tortilla wrap stuffed with quinoa, sweet potatoes and avocado

When the rest of the family is eating burgers, enjoy a vegan tortilla wrap! I think tortilla wraps are such a delightful and light lunch option! Make it nutritious and you are covered!

Quinoa – complete protein containing all essential amino acids.

Sweet potatoes – another super food. Sweet potatoes are high in many important nutrients. They contain a good amount of fiber as well as vitamin A, C, manganese and several other vitamins and minerals.

Avocados – One of my everyday staples! They have a unique nutrition profile. They contain lots of fiber and are rich in vitamins and minerals, such as B-vitamins, vitamin K, vitamin E and vitamin C, potassium and copper.

Ingredients (for 2 wraps): tortilla wrap

1/2 cup uncooked quinoa

2 sweet potatoes

1 avocado

2 tortilla wraps

soy sauce

salt and pepper

chilly flakes

 

How to:

1. start by cooking the quinoa with 1 cup of water and some lemon juice, salt and pepper

2. peel the sweet potatoes, cut them in strips (thick ones) and place them in an oven tray (lined with parchment paper). Drizzle them with olive oil and sprinkle chilly flakes, salt and pepper. Cook them until they are nice and soft.

3. Cut your avocado in strips as well (thick ones)

4. Once the quinoa is finished, mix in some soy sauce.

5. Assembly time: place the tortilla in a plate. Place your sweet potatoes, quinoa and avocado on it and wrap! Enjoy!
