I guess that by now you’ve realised my love for bars and energy balls! Well, nothing beats a great snack and what can i say, i love variety! So, here’s another recipe – a really good one if i may say so myself. It’s full of nuts and fruits, as chunky as they get.
It’s great as a snack and also on the go breakfast – i know that with school season starting i’ll be needing lots of those!
Ingredients:
- 1-1/2cups oats
- 1/2 cup almonds, cut in pieces
- 1/2cup cashews, cut in pieces
- 1/2 cup dried cranberries
- 1/2 cup dried apricots diced
- 1/2 cup agave nectar
- 1 tbsp almond butter
- 1/2 cup coconut flakes
- 1 tbsp coconut sugar
- 1/2 cup of water
- a pinch of salt
How to:
- Mix the oats, sugar, almond butter and water together in a blender. Make sure is a sticky dough.
- Place the rest of the ingredients in a bowl and pour the mix over them. Mix well.
- Pour the mix in a tray lined with parchment paper and refrigerate for a couple of hours, before you cut it into bars.
