Sunshine bites

I simply love these bites for their simplicity and aroma! The combination of the lemon zest and cinnamon is so refreshing, hence their name!

1 cup almonds

2/3 cup dried apricots

2/3 cup shredded coconut (or coconut flakes)

1 tbsp cinnamon

Zest from almost a whole lemon (to taste)

1 tbsp chia seeds (optional)

 

How to:

  1. Place all the ingredients in a food processor and blend until the mixture is well mixed.
  2. Make the mixture into small balls and refrigerate overnight.
