Chia and Oats Blueberry pudding with caramelised bananas

Breakfast is the most important meal of the day! So it better be delicious, nutritious, easy to prepare and fuel our bodies with energy! This pudding has it all! Packed with protein, fiber and antioxidants it’s the perfect, text book start of our day.

Ingredients: chia-and-oats-pudding

Pudding:

2 tbsp oats

2 tbsp chia seeds

almond milk to cover the rest of the ingredients

1 tsp vanilla extract

1/2 tsp cinnamon

1 tbsp maple syrup

2 tbsp blueberries

some chopped almonds

1 tbsp cacao nibs

Caramelised banana:

1 banana

1 tbsp coconut sugar

1 tsp maple syrup

 

How to:

  1. For the pudding mix all ingredients together and leave them in the fridge overnight.
  2. In the morning slice your banana and place it in a saucepan with the coconut sugar and maple syrup for around 5 minutes until the bananas are caramelised.
  3. Leave the bananas to cool and mix them with the pudding.

  1. I love this! Totally something I would enjoy for a nice morning meal 🙂 Though I wish there were some more oats in here! Brilliant idea to add coconut sugar. It must take the bananas to the next level 🙂 Thanks for sharing!
