How comforting it is to have a warm, spicy soup on a cold winter’s night! I can really have soup every day! This soup has such an amazing aroma and the combination of curry, coriander and peanuts is just perfect! You can adjust the spiciness according to your taste buds.
Ingredients (for 2 servings):
2 sweet potatoes, thinly sliced
3 carrots, thinly sliced
1/2 onion, chopped
1 tbsp olive oil or coconut oil
2-3 inch ginger, grated
1 garlic clove, crushed
1/2 cup coconut oil
4 cups water (or more or less depending on the density you like)
2-3 tbsp Curry paste (red or green)
Salt and Pepper to taste
Fresh coriander and Peanuts, chopped to sprinkle on top of the soup
How to:
- Fry the onion with the oil until golden brown and add the ginger, garlic and paste for a further 1 minute.
- Add the potatoes and carrots for 2 minutes and then add the water and simmer until soft.
- Transfer in a blender and blend well. Then add the coconut milk, salt and pepper.
- Pour in your plates and sprinkle with coriander and peanuts.
- Enjoy!
