With summer just 1 month away (and it’s beginning to feel like it), lime and coconut seem like a good choice! Prepare them, sit back, close your eyes and imagine you are in a beautiful sandy long beach ……. can’t get better than that!
Ingredients:
1/2 cup almonds
1/2 cup cashews
3/4 cup shredded coconut
1 cup dates (around 5-6 big ones)
3 – 4 tbsp lime
1 tbsp lime zest
How to:
- Put the nuts in a food processor and processor until they are almost fully broken down.
- Put the rest of the ingredients and blend until well mixed
- Roll the mixture into balls and refrigerate for 1 hour.
