Coconut and Lime balls

With summer just 1 month away (and it’s beginning to feel like it), lime and coconut seem like a good choice! Prepare them, sit back, close your eyes and imagine you are in a beautiful sandy long beach ……. can’t get better than that!

Ingredients:LIME COCO BALLS

1/2 cup almonds

1/2 cup cashews

3/4 cup shredded coconut

1 cup dates (around 5-6 big ones)

3 – 4 tbsp lime

1 tbsp lime zest

 

How to:

  1. Put the nuts in a food processor and processor until they are almost fully broken down.
  2. Put the rest of the ingredients and blend until well mixed
  3. Roll the mixture into balls and refrigerate for 1 hour.
