Superfood bars

OK, I admit it… I just took almost all seeds and nuts my pantry had and threw them in the mixer! With some oats, raisins, cinnamon and vanilla! And the result is sooo good! And filling! And packed with protein, fiber, vitamins! Ideal as breakfast on the go or a snack. 


2 cups oats

4 dates, soaked in 1/4 cup water

2 tbsp almond butter

3 tbsp hemp seeds

3 tbsp pumpkin seeds

2 handfuls cashews

3 tbsp raisins (or dried cranberries)

4 tbsp chocolate chips

1 tsp vanilla extract

1 tsp cinnamon


How to:

  1. Place all ingredients (including the water you soaked the dates in) in the mixer and mix until they are well combined.
  2. Pour the mix in a tray, lined with parchment paper and spread it evenly.
  3. Refrigerate for at least a couple of hours and then cut into bars.
