With temperatures falling (even if slightly here in Cyprus!) I always get cravings for cakes, muffins and chocolates. So last Sunday afternoon, this recipe came up. And i can say it’s going to be a regular in our kitchen. Great as breakfast or mid-day snack, if you like cinnamon and raisins, this one is a must try.
Ingredients:
- 2 cups oats, finely ground
- ½ cup almond flour
- 1 tbsp cinnamon
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- 1 cup almond or any other non dairy milk
- 2 tbsp melted coconut oil
- ¼ cup coconut sugar
- ¼ cup pure maple syrup
- 1 teaspoon pure vanilla extract
- ¾ cup raisins
- ½ cup walnuts, chopped
How to:
- Preheat the oven at 180C and line a baking tray with baking paper
- Mix all the ingredients (except from the raisins and walnuts) well together
- Add the raisins and walnuts and mix well.
- Pour the mixture in your baking tray and bake for about 40 minutes.
