Oat & Almond fruit cake

With temperatures falling (even if slightly here in Cyprus!) I always get cravings for cakes, muffins and chocolates. So last Sunday afternoon, this recipe came up. And i can say it’s going to be a regular in our kitchen. Great as breakfast or mid-day snack, if you like cinnamon and raisins, this one is a must try. 

Ingredients:fruit cake

  • 2 cups oats, finely ground
  • ½ cup almond flour
  • 1 tbsp cinnamon
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 cup almond or any other non dairy milk
  • 2 tbsp melted coconut oil
  • ¼ cup coconut sugar
  • ¼ cup pure maple syrup
  • 1 teaspoon pure vanilla extract
  • ¾ cup raisins
  • ½ cup walnuts, chopped

 

How to:

  1. Preheat the oven at 180C and line a baking tray with baking paper
  2. Mix all the ingredients (except from the raisins and walnuts) well together
  3. Add the raisins and walnuts and mix well.
  4. Pour the mixture in your baking tray and bake for about 40 minutes.
