If you love carrot cake as much as I do, then you should definitely try these bars! The ginger and cinnamon give it such a great taste and the topping simply is divine!
Ingredients:
Bars
2 cups oats
1/2 cuc
1 tbs cinnamon
some grated ginger
1 ripe banana
1 tbs coconut oil
4 tbs honey or maple syrup (or a blend of the 2)
2 tbs almond butter
1/3 cup shredded coconut
1/2 cup or even 1 cup grated carrots
Topping
4 tbs almond milk or coconut milk
1/4 cup grated carrots
1/4 cup sliced almonds
1/4 cup raisins
1/4 cup oats
1 tbs honey
Some cinnamon
How to:
Place into your mixer 2 cups oats; 1/2 cup pecans or walnuts; 1/4 cup chia seeds; 1 tbs cinnamon; some grated ginger; 1 ripe banana; 1 tbs coconut oil; 4 tbs honey or maple syrup (or a blend of the 2); 2 tbs almond butter; 1/3 cup shredded coconut.
Process until it becomes a batter and then add 1/2 cup or even 1 cup grated carrots. Bake for 15 mins at 180c.
Meanwhile prepare the topping:
Mix in a bowl 4 tbs almond milk or coconut milk; 1/4 cup grated carrots; 1/4 cup sliced almonds; 1/4 cup raisins; 1/4 cup oats; 1 tbs honey; some cinnamon.
Once the bar is cooked place the topping and press firmly. Cook for 10 minutes.
Leave it to cool completely and then cut into bars!
