This is our very first Buddha bowl! And we love it!! Buddha bowls are a great way to eat your veggies and protein!
And you can have so many variations, just combine green veggies, a grain and any other veggie you love with a sauce of your preference! Sweet potatoes, broccoli, mushrooms, carrots, quinoa, rice, simple olive oil and herb sauces, avocado sauce ……
In this recipe we used broccoli, asparagus, artichokes and quinoa. And a delicious olive oil, lemon and herbs sauce. In only 20 minutes you have a delicious, nutritious and light bowl of goodness.
Ingredients:
4-5 asparagus
2 artichoke hearts
Some brocolli
1/2 cup uncooked quinoa
Olive oil
1/2 lemon
Mixed herbs of your liking
How to:
Grill or bake your veggies. Meanwhile cook your quinoa with 1 cup water, some lemon and the spices/herbs you will be using in the sauce.
In a mug prepare your sauce and then put the veggies and quinoa in a bowl, pour your sauce on top and enjoy!
