Super easy chickpea salad

Let’s face it, we all want to have nutritious but really easy to make meals!

This is why i love this salad: it’s my default meal when i really want something that can be prepared in less than 10 minutes! It’s packed with protein and fiber and you should definitely try it if you are a parsley and tahini fan! 


1 can chickpeas

1 tomatoe (or 7-8 cherry tomatoes), cut into small pcs

Plenty of parsley, chopped

Juice from 1/2 lemon (or more if you prefer)

4 tbsp Tahini (or more if you prefer more dressing)

Salt and Pepper

How to:

  1. Mix the lemon juice and tahini so you have your dressing.
  2. Mash the chickpeas and then add the parsley, tomatoes and the dressing.
  3. It’s that easy! Enjoy!
