If you like broccoli and quinoa, then this is a perfect lunch or dinner, packed with protein, antioxidants and fiber! Isn’t is great that you can have so much goodness in a plate? And of course in just 20 minutes, as we love quick, really easy to make and of course healthy recipes in this blog!
1 cup cooked quinoa
2 cups broccoli florets
1/2 cup buckwheat
2 tbsp nutritional yeast
1 fax egg (1 tbsp flax meal mixed with 4 tbsp water)
Juice from 1/2 lemon
1 tbsp olive oil
1 garlic clove, crushed
4 tbsp water
Salt and Pepper to taste
1. Start by making the flax egg. Mix the fax meal and water and allow it to become a gel.
2. Process the broccoli in a food processor until they become fine.
3. Add all the ingredients in the processor and processor until well combined and a bit sticky.
4. Lightly fry them until each side is golden brown. Alternatively cook them in the oven at 190 degrees until golden brown.
Serve them with salad, lemon, tatziki (dairy or vegan)!
