What a great snack to have with you! It’s actually more of a sweet! The combination of dried blueberries, lemon juice and zest and coconut just leaves you wanting to eat the lot! They are delicious and packed with the goodness of almonds, coconut and blueberries!
Ingredients:
1 cup almonds
1 tbsp flaxseeds or chia seeds
3 tbsp shredded coconut
3 tbsp dried blueberries
3 dates
2 – 3 tbsp lemon juice
1 tbsp lemon zest
1 tsp vanilla extract
How to:
1. Blend the almonds, seeds and coconut together.
2. Add the rest of the ingredients and blend until well combined.
3. Make small balls and refrigerate.
4. You can then roll them into some lemon zest!
Tip: if you want them a bit more sweet you can use a few stevia drops. Also, feel free to add some more lemon juice and/or zest if you like!
