Vegan Lahmajoun

Lahmajoun, or the Armenian pizza as my kids call it, are not only delicious, they are so filling too! So when my husband makes them, we keep some of the sauce separate and instead of minced meat we add mushrooms! It’s really that easy. Add some lemon juice and you will not be able to stop! 

Ingredients:IMG_5929

3 tbsp. tomato paste

1 tbsp. minced flat-leaf parsley

12 tsp. cayenne pepper

14 tsp. ground cumin

14 tsp. sweet paprika

18 tsp. ground cinnamon

3 oz. finely chopped mushroom

2 cloves garlic, minced

1 plum tomato, grated

1 small onion, grated

12 serrano chile, stemmed, seeded, and minced

 

How to:

  1. Mix all ingredients together in a blender.
  2. Spread the mixture on thin pastry and bake for 5-10 mins until crusty
  3. add plenty of lemon juice and enjoy
  4. makes around 15
