Spinach falafel

I have always been a big fan of falafel, they are a very good, delicious source of protein and fiber. Throw them in a pitta bread with some sliced tomatoes, tahini or hummus and it’s heaven! And they are very easy to make!

This recipe is falafel with the twist of spinach – for the extra goodness!

Ingredients: falafel

2 cans of chickpeas
1 small onion chopped
1 garlic clove
1 cup frozen spinach
2 tsp fresh parsley
1 tsp cumin
1 tsp ground coriander
1 tsp salt
1/3 tbsp flour
1/2 tsp baking powder
1/2 tsp baking soda
2 tbsp breadcrumbs

How to:

  1. Place the chickpeas, onion, garlic, spinach and parsley in a blender and pulse until a dough forms. Add the cumin, coriander, salt, flour, baking powder and soda and mix well. Lastly, add the breadcrumbs.
  2. Make small balls and place in a baking tray with parchment paper, bake for 20 mins. Then fry each side so the falafel is crunchy (otherwise bake for around 30 – 35 mins).
