Super salad with quinoa, lentils and vegetables

I love it when you throw ingredients in a bowl and it turns out to be so delicious and nutritious! If you want protein, fiber, vitamins all in one bowl then this is your salad. It takes around half an hour to prepare and it’s worth every bite. It’s great as a light lunch or dinner.


serves 1

1/2 cup lentils

1/3 cup uncooked quinoa

3/4 cup spinach

4-5 asparagus

1 beetroot

3 mushrooms

1/2 avocado

5 cherry tomatoes

olive oil

balsamic vinegar

salt & pepper to taste


How to:

  1. Start by cooking your quinoa and lentils, separately. The quinoa needs 1 cup of water. The lentils need to be rinsed/water changed twice.
  2. In a saucepan cook you spinach and mushrooms with a little olive oil until they are soft.
  3. In the same saucepan or in the over cook your asparagus with a little olive oil.
  4. Cut your beetroot, avocado and tomatoes in a bowl and when the rest are cooked add them as well. Drizzle with olive oil, vinegar, salt and pepper and enjoy!
