Tortilla wrap stuffed with quinoa, sweet potatoes and avocado

When the rest of the family is eating burgers, enjoy a vegan tortilla wrap! I think tortilla wraps are such a delightful and light lunch option! Make it nutritious and you are covered!

Quinoa – complete protein containing all essential amino acids.

Sweet potatoes – another super food. Sweet potatoes are high in many important nutrients. They contain a good amount of fiber as well as vitamin A, C, manganese and several other vitamins and minerals.

Avocados – One of my everyday staples! They have a unique nutrition profile. They contain lots of fiber and are rich in vitamins and minerals, such as B-vitamins, vitamin K, vitamin E and vitamin C, potassium and copper.

Sun-dried tomatoes pesto

Being Mediterranean, i truly do love the flavours and everything about the Mediterranean cuisine.  I love the ‘fixation’ on fresh, colourful, tasteful products. I love the aromas, the colours, the senses involved in cooking and eating in a Mediterranean country.

So i was in absolute heaven in Tuscany! And of course I came back, but my mind is still somewhere in the vineyards and medieval cities! And thus this pesto! Hope you enjoy it as much as i did!

Soy and vegetable curry

If you like curry you have to try this recipe. We developed it with my hubby and it’s really very good. The flavors are so good, you’ll feel full and still scrap the sauce off the plate! 

The frozen vegan soy (non GMO) chunks i used are from a brand called Vegetarian Butcher – from those living in Cyprus you can find it in Foodsaver Stores!

Also, i used frozen peas, soy beans and aubergines from Ardo –  again from Foodsaver’s.

Easy portobello, quinoa and asparagus dinner

Summer holidays are over, officially at least, now it’s up to us to make the most of the beautiful weather during the weekends!

Even if you are super disciplined, holidays always mean change of eating habits and maybe just maybe going a bit overboard! It’s OK – it’s all part of being human!

So this is the first post holidays dinner I had – easy, virtually fat and calorie free, high in fiber, protein, vitamins A, C, folate, manganase amongst others!

Moroccan quinoa

I’m going through a Moroccan phase at the moment – maybe it’s the heat here in Cyprus! I love the spices used in Moroccan cuisine, they are so intense that each bite is so full of flavour. 

Quinoa is a complete protein, peppers are a great source of vitamin c, k, b6 amongst others and aubergines are an excellent source of dietary fiber and antioxidants. Paired with lovely spices, it is a guaranteed success!

Quinoa stir fry

I know it’s a bit of a cliche, but I am crazy about superfoods… or if you don’t like the term superfoods, foods that are good for you! Quinoa, Soy beans, Kale, Broccoli,Avocado, Ginger and Turmeric are such foods. So, if you put them all together in a plate… well your body and health love you a bit more!
