Soy and vegetable curry

If you like curry you have to try this recipe. We developed it with my hubby and it’s really very good. The flavors are so good, you’ll feel full and still scrap the sauce off the plate! 

The frozen vegan soy (non GMO) chunks i used are from a brand called Vegetarian Butcher – from those living in Cyprus you can find it in Foodsaver Stores!

Also, i used frozen peas, soy beans and aubergines from Ardo –  again from Foodsaver’s.

Blueberry muffins

Ever since i remember i’ve had a thing for blueberry muffins. And carrot cake… but that’s a different post!

There is something in baked blueberries that really does it for me, and admittedly i had missed them now that i’m off dairy and eggs. 

So, last Saturday afternoon i decided to put this recipe together and finally enjoy my afternoon coffee with a muffin… or two … or three …. you get the drift!

Strawberry ‘yoghurt’

Apart from the fact that I’m a sacker for pink, this bowl is soooo creamy and tasty, it is really a lovely way to start your day! When I made this i was in a weird kind of ‘leave me alone’ ‘i don’t want to wake up’ ‘i need to get back to bed’ mood! And honestly, it all changed when I tasted my breakfast!

It’s packed with protein, vitamins and healthy fats – so go ahead, reward yourself for getting out of bed!

Raw granola

Honestly, i think this is my favourite recipe in a while! It’s sooo delicious and sooo full of healthy ingredients and sooo versatile – you just have to try it. 

You’ve got walnuts, almonds, flaxseed meal, chia seeds and hemp seeds – full of healthy fats, fiber and proteins; coconut, cinnamon, raisins and dates for their beautiful taste. 

You can eat it with a spoon, make overnight granola, add your milk or yoghurt or top your dessert or oats!

Almonds, Pistachios and Rose water butter

This recipe was inspired by a very good chef friend of mine – he came up with a sweet for his restaurant with rose water and pistachios and I simply couldn’t resist it! I don’t know if it is our Mediterranean roots and influences, but there is something about pistachios and rose water that is so delicious! 

I know it might strike you are odd at the beginning, but trust me it gives such a unique, refreshing taste to your smoothies!

Tahini and superseeds overnight bowl

I swear I can put tahini everywhere. I love the taste and of course the health benefits – high in healthy fats and amino acids, great source of vitamins and minerals, improves skin health etc etc!!

Add some super seeds in there and you’ve got breakfast or the champions! Chia seeds, hemp seeds, flax seeds! 

And then, cacao nibs, oats and berries (strawberries are particularly good!)
