Lahmajoun, or the Armenian pizza as my kids call it, are not only delicious, they are so filling too! So when my husband makes them, we keep some of the sauce separate and instead of minced meat we add mushrooms! It’s really that easy. Add some lemon juice and you will not be able to stop!

Easy portobello, quinoa and asparagus dinner
Summer holidays are over, officially at least, now it’s up to us to make the most of the beautiful weather during the weekends!
Even if you are super disciplined, holidays always mean change of eating habits and maybe just maybe going a bit overboard! It’s OK – it’s all part of being human!
So this is the first post holidays dinner I had – easy, virtually fat and calorie free, high in fiber, protein, vitamins A, C, folate, manganase amongst others!

Moroccan quinoa
I’m going through a Moroccan phase at the moment – maybe it’s the heat here in Cyprus! I love the spices used in Moroccan cuisine, they are so intense that each bite is so full of flavour.
Quinoa is a complete protein, peppers are a great source of vitamin c, k, b6 amongst others and aubergines are an excellent source of dietary fiber and antioxidants. Paired with lovely spices, it is a guaranteed success!
Chickpea croutons
Chickpeas are one of my favourite legumes! They are delicious, packed with protein and fibers! They can be cooked with tomatoes, roasted with spices, they can be used for hummus! They other day i wanted something to make my soup a little bit more interesting, so I roasted chickpeas and voila chickpea croutons! Great in salads, soups or over really anything.
Spinach falafel
I have always been a big fan of falafel, they are a very good, delicious source of protein and fiber. Throw them in a pitta bread with some sliced tomatoes, tahini or hummus and it’s heaven! And they are very easy to make!
This recipe is falafel with the twist of spinach – for the extra goodness!
Power Burger
Who said that vegans don’t get enough protein?! This burger is a tasty proof to the exact opposite! Chickpeas, quinoa, peas and kale all come together to infuse this burger with protein, antioxidants and fiber! A protein bomb! And it’s so easy and quick to make!
