As a vegan you need to know exactly what to eat to get your protein and other nutrients. This pate is perfect! The lentils and cashews provide us with lots of protein, iron and fiber! You can enjoy it with celery and carrots (which are also great alkalizing foods), cucumber, tomatoes, red peppers, crackers!

Almond Milk
I just love almond milk! Its neutral, yet creamy taste is perfect for anything from drinking it on its own, to adding in in smoothies, oats, chia puddings, bars, desserts, coffee, any dish really!
You can use this method with really any nut, oats or even coconut meat!
Nut Butter
I think making your own delicious nut butter is just great! You can use it in smoothies, overnight oats, puddings, bars! And it’s really very simple to make! with just one tablespoon you can have the goodness of the nut you chose!
Kale Pesto
If you are a pesto fan why not add kale in your next recipe, since kale is super nutritious! Don’t worry about the bitter taste of kale (if you are not a big fan) because you don’t feel it at all. And again, it’s such a pleasure to have delicious, nutritious food with such little cooking time!
Pesto is another great sauce because it’s so versatile: you can use it in pasta, sandwiches, pizzas, toasted bread, as a dip ….
Spinach falafel
I have always been a big fan of falafel, they are a very good, delicious source of protein and fiber. Throw them in a pitta bread with some sliced tomatoes, tahini or hummus and it’s heaven! And they are very easy to make!
This recipe is falafel with the twist of spinach – for the extra goodness!
Apple and Blueberry Tart
This is a recipe my mum taught me, it’s really very easy to make but so delicious you will not be able to stop eating. It’s not that sweet, hence not heavy at all. Daniel says it should be part of your 5 a day, as it has so much fruit!
Walnut Granola
Granola has always been one of my favourite foods. It’s nutritious, delicious and filling. I love blending it with almost everything, anytime of the day! It’s great with fruit, yoghurt, ice cream or just plain milk (if you eat dairy), nut mouse or milk!
Super easy chickpea salad
Let’s face it, we all want to have nutritious but really easy to make meals!
This is why i love this salad: it’s my default meal when i really want something that can be prepared in less than 10 minutes! It’s packed with protein and fiber and you should definitely try it if you are a parsley and tahini fan!
